How to make Eve's Pudding - A Recipe

Serves about 6-8. Half it to make a smaller version but remember to adapt the cooking time.

Ingredients

For the apple base

  • 100g butter

  • 100g sugar

  • half a vanilla pod

  • 6 apples, peeled, cored and chopped (I used windfall cooking apples a mixture of sizes)

For the sponge topping

  • 225g butter

  • 225g caster sugar

  • 4 eggs

  • 225g self raising flour


Method

  1. Take the butter, sugar and vanilla pod and heat gently for two to three minutes.

  2. Add the apples and allow to soften for about 10 minutes.

  3. Meanwhile make the sponge by creaming together the butter and sugar.

  4. Add the eggs and a handful of the flour and mix.

  5. Add the rest of the flour and mix until thoroughly combined.

  6. Pre-heat the oven to 160 fan.

  7. Grease a deep baking dish.

  8. Place the apples and and juice in the bottom.

  9. Layer the sponge on top and spread all over.

  10. Bake in the oven for 30-40 minutes.

  11. To test if its cooked slide in a metal skewer into the centre of the sponge. If it comes out clean it’s cooked. If it has sponge mixture on it it’ll need a few more minutes.

  12. Serve with custard.
