Perfect for those days when it’s cold outside and you need gently warming up.
Ingredients
275g plain flour
pinch salt
1 and a half tsp baking powder
1 tsp bicarbonate of soda
50g butter
175g honey
50g black treacle
60ml black tea
50g soft brown sugar
2tsp ginger
2tsp cinnamon
half tsp ground cloves
half tsp grated nutmeg
120ml milk
2 eggs
Optional: sugar for the topping (see below)
Method
In a bowl mix the flour, salt, baking powder and bicarbonate of soda.
In a saucepan melt together the butter, honey, black treacle, black tea, soft brown sugar and the spices.
Beat the eggs into the milk gently.
Remove saucepan from the heat, allow to cool slightly, then mix in the eggs and milk mixture.
Pour the wet mixture into the dry and, using a balloon whisk, gently mix until all lumps have gone.
Pour into a lined loaf tin and bake at 140 degrees in a fan oven for 45 minutes to one hour.
