Simple Pancake Recipe for Shrove Tuesday (Pancake Day!)

simple recipe for pancakes for shrove Tuesday

Whilst we're not big on Halloween or Valentine's we do get very excited about Pancake Day, or rather Shrove Tuesday. Despite regularly having American pancakes for a weekend breakfast we still get excited about eating these, what we call English pancakes to differentiate, for tea. And they couldn't be easier. Ignore the plastic containers of pancake mix from the supermarkets. Just grab yourself some plain flour, milk and eggs and you're sorted.

Recipe for Simple Pancakes

Equipment

Mixing bowl, whisk, non-stick frying pan, kitchen paper towel, soup ladle.

Ingredients

  • 250g plain flour
  • 600ml milk
  • 2 eggs
  • pinch salt
  • sunflower or vegetable oil for frying

Method

  1. In a mixing bowl add all the ingredients. Whisk until there are no lumps and it is nice and frothy.
  2. Pour a little oil in your frying pan, wipe around with the kitchen paper towel and turn up the heat.
  3. Pour a soup ladle amount of batter into the frying pan then tip the pan in a circular motion so it covers the entire base. (Depending on the size of your frying pan you may need a little more batter.)
  4. Allow to cook on a medium to high heat. Watch the pancake change colour from outside to in. Once the centre has changed colour it is ready to flip.
  5. Flip your pancake - you can make this as dramatic and exciting as you wish. Try not to drop it!
  6. Cook on the reverse side for a few more seconds.
  7. Serve with topping of your choice. Personally I adore sugar and lemon.
